Veggie "meatballs" for pasta
Combine all ingredients and mix well to form a stiff dough. Chill for several hours. To cook: form dough into small 2inch diameter ovals and drop the dough ovals into salted, boiling water. when the Malfatti rise to the surface they are done remove them from the water with a slotted spoon. keep them warm until all are cooked.
Serve them on pasta with marinara sauce and Parmesan or Romano cheese.
