Talk about South African cuisine and you will think of Malva pudding for dessert. It is very sweet and are served hot with custard, cream or ice-cream. It is made with fairly simple ingredients and has a cake texture. The sauce that is added afterwards is what makes this pudding such a favourite. Also known as the Jan Ellis-, Scotish cream- and brown pudding.
Cream margarine and sugar. Add jam. Whisk eggs into mixture. Add self-raising flour.
Dissolve bicarbonate of soda in milk before adding. Add vinegar and mix well.
Pour into 8x11x2 inch dish and microwave for 10 -12 minutes on high.
Sauce:
Mix ingredients and heat slightly to dissolve sugar.
Cut pudding into squares and pour over hot pudding.
Serve with custard.
(for Orange Malva Pudding - replace water with the same amount of orange juice)
