Preheat the oven to 350 degrees (F) and bring pasta to a boil. While cooking pasta, put all 12 saltine crackers in a plastic bag and crush them with a wooden spoon. Combine 1 1/2 cups of cheese, ricotta cheese, crackers, eggs, basil, marjoram, chives, and garlic salt in a large bowl and mix. Once all ingredients are mixed and pasta is drained, pour half of the spaghetti sauce in a large baking pan. Using a spoon, stuff the filling inside the individual pasta shells/ manicotti, placing them in the pan as you go. Pour the remaining spaghetti sauce over the stuffed shells. Bake in the oven for 25 minutes. Remove pan from oven and sprinkle the remaining mozzarella cheese over the manicotti, cook in the oven for 5 more minutes, or until cheese is melted.
