Mom's Manicotti
Mix thoroughy cheeses, eggs, parsely or spinach and salt.
Parboil Directions Add 1 teaspoon of salt to sex quarts rapidly boiling water. Gradually add six manicotti so that water continues to boil. Cook uncovered stirring occasionally until almost tender--approximately 3 min. Drain manicotti. DO NOT rinse. Repeat procedure for remaining 6 manicotti. HEAT two pint jars or one quart jar of sauce, to this ADD 1 cup of water. Pour half this sauce in bottom of baking dish. Fill individual manicotti with cheese mixture using a teaspoon. Arrange filled manicotti in baking dish in single layer, with space in between each to prevent baked product from blending together. Top with balance of sauce, completely covering manicotti. Bake preheated 400 degree oven for 25 minutes. sprinkle parmesan cheese over the top and serve.
