Tasty fish dish, good with Asparagus
1. Prepare broiler pan. line bottom with foil. place wood chips in even layer across whole bottom. place lightly greased broiler tray on top and tight fitting lid on that. preshape foil to seal lid to pan and tray, set aside, with lid and foil off. 2. In small sauce pan combine maple syrup, orange juice, lime juice, and bourbon. Cook, uncovered over medium heat for 5 minutes. 3. Rinse fish; pat dry with paper towels and debone as required. Lightly sprinkle salmon with salt and pepper to taste. If skin is on (desirable) sauté in pan over high heat for 5 minutes, skin side down, to crisp and caramelize. If not skip to step 6 and broil both sides. 4. Preheat broiler. Transfer fillets to broiler tray, skin side up. Cover with lid and seal with foil. Place on two burners, high heat for 5-10 minutes (longer produces smoker flavor). Do not remove lid, oxygen can induce fire. Take outside to cool for 5 minutes. Remove lid and vent smoke. 5. Flip fillets to, skin side down. Broil 6 to 8 inches from heat for 5 minutes. Remove 2 tablespoons of the glaze and spread on both sides of fillets. Turn salmon; broil about 5 minutes more or just until salmon flakes easily when tested with a fork. 6. Stir walnuts into the remaining glaze; cook over high heat about 5 minutes or until glaze reaches the consistency of syrup. Serve salmon topped with walnuts and glaze mixture. Squeeze a little additional lime on top and set wedges on side of warmed plates as garnish. 7. Sprinkle with crumbled blue cheese for a nice contrasting flavor.
