Easy, casual, yet impressive dinner
Preheat oven to 275*. Mix chipotle and salt and rub loin. Place in baking dish and cove tightly. Bake 3 1/2 hours or 1/2 hour per half pound. Meat should be fork tender when taken from oven. Let stand for 10 minutes to reabsorb juices.
Collect pan drippings and dilute slightly to make a thin gravy. Serve whole with tortillas, avocados, grilled or pickled onions, cilantro and black beans. Let diner pull off pieces to create soft tacos.
