Slow cooked from scratch marinara sauce perfect for pizza or pasta
Heat a souce pot to medium high heat
Start with some olive oil in the pot and add the leeks, onion, celery, and garlic
Season with salt and pepper
Saute until the onions turn translucent and start to brown a little
Add the tomato paste and cook stirring frequently for 4 minutes
Watch the bottom of the pot for burning during this step
Add the red wine and stir to combine
Add the tomatoes with liquid and bayleaf
Add the sugar
Bring up to a boil and then turn down to a simmer stirring frequently to avoid burning vegetables on bottomof the pan
Simmer on low for no less than 3 and up to 4 hours stirring every 20 minutes
