From "Marcella's Italian Kitchen", a refreshing take on green beans for summer.
1. In a large bowl, combine herbs, onion, garlic and vinegar. Allow to steep for 30 minutes to allow flavors to combine.
2. Trim green beans and drop into boiling salted water to blanche. Cook only briefly, draining while still very firm.
3. Add the hot beans to the marinade and marinate for 1-8 hours. Mix periodically to be sure all beans are coated in marinade.
4. Serve beans at room temperature, adding olive oil, salt and pepper to taste.
