Suggest a better descriptionHeat the olive oil in a large frying pan or griddle pan until very hot. Season the marlin steaks with salt and freshly ground black pepper and cook for 3 minutes on each side, increasing the cooking time for a thicker steak. In the meantime make the dressing; place the olive oil in a mixing bowl, then slowly whisk in the hot water and lime juice. Add the garlic, parsley and oregano and whisk until smooth and emulsified. Serve the marlin steaks with the warm dressing drizzled over. Serve immediately. NOTES : A quick and easily prepared dish with a warm herby dressing.Ideal served with new potatoes and salad.
