Fondant for cakes
Put marshmallows, water & vanilla in a large microwaveable bowl. Microwave for approximately 1.5 minutes. Stir until melted and smooth. If you want to color your fondant, add color to the marshmallow mixture now. Put shortening & powdered sugar in a large mixing bowl. Make a well in the powdered sugar and pour the melted marshmallows in the hole. Using the dough hook, mix until most of the powdered sugar is incorporated. Pour all contents of the bowl onto a well greased counter and knead until all powdered sugar is mixed in and fondant is smooth. Put a thin coat of shortening on the outside of the fondant ball, cover with plastic wrap and place in a zip loc bag. Keep in a dark place. Do not put in the refrigerator. If fondant is stiff when you go to use it, microwave a little at a time and knead until elastic.
