Mashed Potato Casserole -- a Company Favorite
Cook and mash potatoes as if making traditional mashed potatoes. Mix all ingredients together. Save some of the cheese to sprinkle on top of the casserole before final minutes of baking. Pour into a 9 x 13 casserole dish. Bake, uncovered, at 375 for 25 minutes. Top with cheese and bake until melted.
This freezes well before baking. Great to have on hand for last minute company dinners.
