Use leftover mashed potatoes, mixed with veggies and cheese!
Heat a large frying pan to medium high heat and add the oil.
Add the vegetables, cheese, eggs, salt and pepper to the mashed potatoes and mix well. Put the seasoned flour in a large bowl or pie plate. Make the mashed potato mix in hamburger sized patties and dip in the flour mix to cover. Shake off the extra flour and fry a few at a time in the oil until golden brown on each side. Don't over crowd. Add more oil if needed.
Placed cooked patties on a raised grate over paper towels and sprinkle immediately lightly with salt.
