Mashed Potatoes, Yams and Turnips
Cook yams, potatoes and turnips in large pot of boiling water until tender, about 25 minutes. Drain. Return vegetables to pot. Add butter, 1/4 cup parmesan and grated onion and mash until butter melts and vegetables are smooth. Season with salt and pepper. Whisk cream and yolks in small bowl. Mix into vegetables. Transfer to casserole dish. Top with remaining cheese. Cover with foil. Can be prepared 8 hours ahead. Refrigerate.
Preheat oven to 400F. Bake mashed vegetables until heated through, about 30 minutes. Uncover and bake 10 minutes more. Cool slightly before serving.
