1. Heat wok or heavy skillet until very hot.
2. Add walnut oil.
3. Add white part of scallions and ginger.
4. When the scallions and ginger begin to cook (become aromatic), add the sugar and mushrooms.
5. Stir occasionally until the mushrooms are reduced by a third.
6. Stir in the soy sauce and the oyster sauce.
7. Add the green part of the scallions.
8. Remove some of the liquid from the pan and mix it into the dissolved cornstarch, then return this mixture to the pan.
9. Cook a few minutes until the sauce is thickened.
10. Add white grape juice and sesame oil.
