1 c Fine dry bread crumbs
Salt and pepper
3/4 lb Ground beef
1/2 c milk
1 sprig parsley; chopped
1 clove Garlic; minced
2 Eggs; Well-beaten
1/2 c Grated Parmesan cheese
1 tbs parsley flakes
1/4 lb Ground pork

Original recipe makes 6



Combine meats, crumbs, cheese, parsley, garlic, milk, eggs, and seasonings; mix throughly. Form into small balls; brown in hot fat. Add to sauce and cook over low heat 15 minutes. Excellent Italian recipe. Easy, moist meatballs. Add more fresh parsley for a kick.

My family likes this recipe. I add chopped celery or spinach to it. As an alternative to frying, I put these on pans and bake 350F for 23-25 minutes (until no longer pink in middle). I freeze the extras by putting them in ice cube trays for 15 minutes, then bagging them for later. Yummy!
