This was originally an Alton Brown recipe, but has been adapted to a "my grocery store" level. It remains fabulous.
Prep Time: 30 min Cook Time: 45 min Level:

Heat oven to 325 degrees F.
In a food processor bowl, combine croutons with black pepper, cayenne pepper, chili powder, and thyme. Place this mixture into a large bowl.
Finely shred the carrot and garlic, finely chop the bell pepper and onion. Toss into the spice mixture, add the meat.
Season with the kosher salt. Add the eggs and combine thoroughly, but avoid squeezing the meat.
Pack mixture into meatloaf pan, (mine is aluminum with a "meatloaf" insert to avoid grease pooling,). Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees. Allow 60 - 90 minutes to cook thoroughly.
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey on the stove over low. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes. Save reserve for "sauce," at table. Paint liberally.
So, no offense to Alton Brown, but I use a meatloaf mix (beef / lamb / veal) and cut the chilli powder in half. I also baked it in my "meatloaf dish" as opposed to a loaf-shape on a cookie sheet. Also, cook time on this was 90 minutes! Plan for that next time! AND double the sauce - good baked on top and as a condiment too! (The sauce was really really good!)
November 2010 - AWESOME! made this word for word with no changes, but douvbled the sauce. (Was a little too crumbly)
August 2012 - Still a favorite, made many times. Have made all necessary changes into main recipe and now claim it as my own.

DAMIAN LOVES THIS MEATLOAF!!! Made EXACTLY as described. Doubled the sauce, and changed that in the recipe so that will always have enough glaze/sauce.
