Easy and very good.

"Great recipe, but the ingredients call out for parsley when the instructions call for basil. This little thing could cause a huge difference in taste considering the amount called for in the recipe. I made it with parsley because that's what was added to my shopping list, but next time I think I'll try basil and I bet it comes out even better."

4 boneless chicken breasts; cut up in 1x2 strips
1 medium onion; cut into thin julienne strips
2 cloves Garlic; minced
1 small jar artichoke hearts; drained and chopped
1/8 cup capers; drained
1/2 cup fresh basil; coarsley chopped, reserve 1/4 cup for the end
1/2 cup sundried tomatoes; coarsley chopped
olive oil- enough; to coat bottom of pan
salt and pepper
1/4 cup heavy cream
1/4 cup leaks or green onions; sliced
1/4 cup marsala or madiera wine
1/4 cup pine nuts
1 juice of 1 lemon
Angel Hair; Linguini, or Percatelli pasta
fresh parsley; as desired

Original recipe makes 4 Servings



Heat olive oil in pan over med high heat. Add chicken and brown until chicken has a good sear. Add onions and garlic. Cook for 2 minutes. Add artichokes, capers, sundried tomatoes and pine nuts. Salt and pepper to taste. Toss evenly. Add leeks/green onions and 1/4 cup of fresh basil. Add wine. Bring to an even bubble. Add lemon juice then cream. Stir and heat to thick and bubbly.

Serve over pasta.

Here it is! We increased the cream to 1 1/2 cups and used basil. This was sooo great. It was a home coming dinner for my husband and he gave it a 10.

My husband and I really love this dish! I don't add the cream and we love the sauce more! Noticed the parsley vs basil issue. Not sure which one is right but we like it with parsley. This one goes in the regular rotation.

Nice recipe and relatively easy to make. Next time I'm halving the artichoke hearts bc it felt like a lot. Thx

Love all of the flavors. Used roasted red pepper instead of sun dried tomatoes and changed to a cheap Moscato wine b/c that's what I had on hand.

Excellent Flavor! I substituted long grain rice for the angel hair pasta and it worked well.

The flavor of this dish is AMAZING! Really a great dish. We used basil and increased the cream to 1 1/2 cups. Also topped it with shredded Parm.
