Excellent cold salad for picnics or general summer days

"This was wonderful and fresh tasting! The only thing I did different is that I used halved grape tomatoes instead of sun dried. This is a great dish to take to party or Pot Luck supper."

Ingredients

Are you making this? 
2 cup Uncooked orzo
2 cup Baby spinach; chopped
1/2 cup Sun-dried tomatoes; chopped
3 tablespoon Red onion; diced
3 tablespoon Kalamata olives; pitted and chopped
1/2 teaspoon Black Pepper; freshly ground
1/4 teaspoon Salt
6 ounce Marinated artichoke hearts; chopped
3/4 cup Feta cheese; crumbled

Servings  

Preparation

1. Cook the orzo according to package directions, omitting salt and fat.

2. Drain the orzo and rinse with cold water.

3. Combine the orzo with the rest of the ingredients in a large bowl.

4. Add as much of the marinade from the artichoke hearts container and sun-dried tomatoes as desired.

Notes

Ingredient amounts are suggestions only. Add as much of each ingredient as wished, omit ones you don't want, and add new ones
