An easy "end of the week recipe" I came up with the day before payday when the frigde was almost bare.
Pre heat oven 200oc.
Mix Parmesan, Salt, Pepper & ½ cheese through the white sauce. Heat till cheese is melted and sauce is smooth. Set aside.
Mix vegetables, mushrooms & pasta sauce together. Set aside.
Combine the pasta with ½ of white sauce.
Place 1/3 pasta sauce mix in bottom of baking dish, add layer of pasta. Continue with layers until all ingredients are used.
Put remaining white sauce evenly on top, combine breadcrumbs, cheese & chives, sprinkle on top and bake for ½ hour.
Serve with bread & salad.
Variation: Add 250g cooked dices chicken to the pasta.
