A deliciously refreshing, chilled fruit soup, just right for a hot summer's day.
Cut melons in half. Scrape out seeds. With melon baller, scoop out 2 dozen balls and set aside. Scoop out remaining melon and put in a food processor.
Place sugar, water, and zest over low heat. Stir until dissolved then boil for about 2-3 minutes. Remove from heat and cool slightly.
Pour half liquid into processor with melon. Blend until smooth. While blending, add the rest of the liquid and lime juice to taste.
Pour into serving bowl, add basil and chill.
Serve garnished with a few basil leaves and the melon balls.
