This recipe has been floating around my family for years. It's another one of those where no one knows where it came from, but we would be lost without it! SUPERBOWL fav!
Can double, triple, or even quadruple this recipe ... it freezes fantastically!
In medium bowl, combine beef, bread crumbs, 2 tablespoons cilantro, salt and black pepper; with moistened hands, form the mixture into 12 meatballs.
In a large skillet, heat olive oil (can also use nonstick cooking spray) over medium heat, and cook meatballs until lightly browned, about 5 minutes. Remove meatballs to paper towels. Add onion, bell and jalapeño peppers; sauté until lightly browned, about another 5 minutes.
Stir in tomatoes, cinnamon and remaining 2 tablespoons cilantro; return meatballs to skillet; cover and cook until meatballs are cooked through, about 15 minutes. Stir in kidney beans, corn and olives. Simmer about 5 minutes until mixture is heated through.
Remove from heat top with cheddar cheese Let stand until cheese starts melting and gets all nice and gooey!
I serve this with warmed tortilla chips and sour cream!
