My family loves these beans with the Pork Belly
First, place the dry Pinto Beans on the counter and pick out any of them that don’t look appetizing, throw out the bad beans and put the good ones into a strainer and rinse them off thoroughly.
In 3- to 4-quart slow cooker add beans, water and all other ingredients.
Cover and set slow cooker heat to high for 1 hour. Low heat setting and simmer Pinto Beans very slowly for 4 to 6 hours, or until beans are very tender. Add water as needed to maintain level. When beans are quite tender, remove from heat. The beans are ready to serve or to make Refried Beans.
Refried Beans; When beans are extremely soft, prepare a large skillet by heating 2 tablespoons of drippings or lard over medium heat. Using a slotted spoon, add in about 1/2 cup of beans and mash with back of spoon or mashing utensil. If the mixture seems thick, add about a tablespoon of the cooking liquid from the beans. Continue to add beans and mash them together, adding liquid as necessary.
Add a 1/2 cup grated cheddar cheese. When beans are heated through and the cheese melted the beans are ready to serve.
Substitutes:
1 clove of garlic = 1/2 teaspoon of garlic flakes, or 1/8 teaspoon garlic powder.
1 small onion or 1/3 cup of chopped onion = 1 tablespoon of dried onion flakes or 1 teaspoon of onion powder.
Thick Bacon or bacon grease, ham hock, or a chunk of fat meat
