A spicy Mexican-style casserole with beef and vegetables. Best when served with chips.
Brown ground beef over high heat. In a separate pan, combine all ingredients except cheese, set aside. Once meat is cooked, drain off remaining fat, then add the meat to the other ingredients and stir to combine, and lower heat to med-low. Let simmer uncovered for 3-5min, stirring occasionally. Spray a 13" x 9" casserole dish with non-stick cooking spray, then use half of the chips to create a single layer on the bottom of the dish. Carefully spoon ~1/2 of the casserole filling onto the chips, then place the pan back on the burner to keep warm. Use the remaining chips to form another single layer on top of the casserole filling, then pour the remaining filling over the second layer of chips, ensuring to cover chips completely to avoid burning and protruding chips. Bake at 350 degrees for 24-25min. Remove from oven, sprinkle grated cheese evenly over the top of the casserole. Bake for an additional 5-6min, then allow to cool briefly before serving. For best results, serve with chips (scoop or spoon casserole onto chips as desired).
