Mexican rice casserole dish of chicken, beans, cheese, tortilla chips and seasonings.
Preheat oven to 350 degrees F.
In a sauce pan, bring the chicken broth to a boil. Add the rice and turn to a LOW-med heat.
Jasmine rice takes about 15 minutes to cook. After it's cooked, put the rice in a casserole dish as a bed for the other ingredients.
In another sauce pan, begin heating the black beans.
In a large skillet, saute the chicken using olive oil.
Put the Steam Fresh corn in the microwave.
Add the taco seasoning to the chicken with 2/3 cup water and simmer for 4-5 minutes while stirring.
(Rice should be done cooking by this point.)
Add the black beans and corn to the chicken in the pan. Simmer for five minutes while stirring.
Place mixture of beans, corn and chicken on bed of rice in casserole dish. Put a layer of half of the cheeses on top of the mixture. Crush tortilla chips on top of the cheese.
Place in oven for 15 minutes.
Pull out and put the remaining half of cheese on top of tortilla chips.
Put back in oven and let top layer of cheese become bubbly and melty.
Pull out and let sit for 5 minutes before serving.
