Mexican Fish

Mexican Fish

Ready in 1h

This fish recipe is ready in no time and uses the most common ingredients.

1 pound Cod filets; tilapia work fine, too
Salsa; chunky works best
Corn chips; crushed
Shredded cheese; Cheddar or Mexican blend

Original recipe makes 2 Servings

Preheat the oven to 400F.

Rinse the fillets and pat dry. Lightly grease a baking dish (I tend to use a bread pan, actually). Place the fillets in the dish, cover with salsa and cheese, and sprinkle crushed corn chips on top.

Bake for about 15 minutes or until done.

We usually serve it with brown rice, sour cream, and avocado.
