This quick great recipe will give you great results for a delicious Hollandaise Sauce in the microwave. You can make this as you're poaching eggs, or finishing the last of a dinner recipe that needs a tasty sauce. It can also be used for steamed veggies very quickly and make yourself look like a super chef!
"This was a simple, straight-forward recipe for a great hollandaise sauce. I found it a bit lemony and lacking in other flavors so I recommend doing 1 tblsp and 1 tsp lemon juice and adding to your taste. I also added a bit more salt and pepper and a bit of cayenne per other recipes and it was fantastic. A great hollandaise and my new go-to for my favorite eggs Benedict!!"
1. Combine egg yolk, lemon juice, salt and white pepper in a small microwave safe bowl and blend thoroughly.
2. Melt butter in the microwave on High (100%) for 30 to 45 seconds. Add the melted butter in a steady stream to egg yolk mixture, stirring constatnly. When butter has all been added, microwave on High (100%) about 1 more minute, stopping and stirring every 15 seconds. Stop microwaving when sauce becomes thick and smooth, which may be before 1 minute total time.
HINT: If sauce curdles and breaks, you can recover it by heating 1 ounce of milk to boiling and adding it slowly to the Hollandaise while beating vigorously.
bullish35 10m agoI love this recipe! Definitely heed advice to reduce microwave time to 6 or 7 seconds after first 10 second blast. I would also recommend being cautious with the salt. I find that the 1/8 teaspoon is a bit too much.
Mrsswill 2y agoWish I had read the reviews before making this. Didn't make it to the second microwaving, it curdled right away. What a waste! Luckily, I found another recipe that had me prepare it on the stove and it worked perfectly. This recipe seems to work for others, guess it was just me.
elenafeldbaum 3y agoI agree with other reviewers on less lemon juice and shorter microwaving intervals. Otherwise, I love that it's fast, easy and delicious!
robertjboever 4y agoI suggest using less lemon juice and adding a dash of dry mustard. Also when microwaving, only 10 seconds the first time and 6-7 seconds each time after.

stratman58 5y agoExcellent recipe, tastes great, puts many restaurant hollandaise sauces to shame. Just be careful not to curdle it - in my microwave, after one blast at 10 seconds, I switch to 6-7 second zaps, stirring thoroughly after each one.
Usaborn 5y agoThis very close to what I made this morning, but you can add a pinch of dry mustard. I love this sauce.
