1 md Onion; chopped
2 lg Potatoes, Diced
1 qt Chicken Stock
2 Leeks, Chopped
2 Stalks Celery, Chopped
1 c Spinach, Chopped
19 oz Romano Beans, Rinsed
1/2 Head Cabbage, Chopped
Parmesan Cheese, Grated
2 Cloves Garlic, Chopped
6 oz Pasta, Uncooked Macaroni
3 tb olive oil
4 sl Bacon, Chopped
3 tb Tomato paste

Original recipe makes 8 Servings



Cook the pasta and drain, reserving 1 cup of the water. In a large pot, heat the oil and add the next 10 ingredients. Cook until the vegetables are slightly tender. Add the reserved pasta water, chicken stock, Romano beans, pasta and simmer for 30-40 minutes. Adjust the seasonings and serve topped with grated cheese.
