Needed a good, low-fat meal using up the ingredients I have in the 'fridge.
Remove the casings if the sausage is in link form. Brown the sausage in a large soup pot in the olive oil. When the sausage is browned, add the onions, celery, and carrots and garlic and cook until fragrant. Add the cabbage, green beans, tomatoes, and herbs chunk of cheese Bring to a boil and then reduce heat and simmer until the vegetables are softened. Drain and rinse the beans and add to the soup. Add salt to your taste.
