Nice, individual cheesecakes, especially good for parties. I served mine plain, but put out bowls of toppings (cherry pie filling, blueberry pie filling, crushed Heath Bar, chocolate chips, etc.) so everyone could make their own!
Preheat oven to 325.
Line muffin tins with foil or paper liners. Place 1 vanilla wafer in each liner. Mix the cream cheese, vanilla and sugar until well blended. Add the eggs and mix well. Pour mixture over the waters, fill 3/4 full. Bake for 25 minutes at 325. Cool, remove from muffin pan and refrigerate. Can be eaten as-is, or served with fruit / pie filling or chocolate.
