Grease Lamington pan and line with baking paper.
Combine BUTTER and EGGs in a bowl.
Combine FLOUR and CORNFLOUR and sift into the butter mixture bowl.
Add SUGAR, ORANGE ZEST and VANILLA ESSENCE.
Using electric mixer beat at medium speed for 3 minutes or until smooth and lighter in colour.
Spoon mixture into pan, smooth out the surface and place on the middle shelf of the oven.
Bake for 30 minutes or until a skewer inserted in to the middle of the cake comes out clean.
Allow to stand in the pan for 5 minutes before turning out on to a cooling rack.
While cake is baking, grate remaining ORANGE ZEST, spread out on a plate and allow to dry out slightly.
Mix with the COCONUT on a flat tray.
To make the chocolate sauce, sift the ICING SUGAR and COCOA into a bowl.
Stir in the ORANGE JUICE and BOILING WATER and mix until smooth.
Trim the edges of the cake then cut into 24 even portions.
Place a piece of cake into the sauce and use 2 forks to gently turn the cake onto each side.
Lift the cake balanced on the 2 forks allowing any excess chocolate sauce to drip off.
Roll in the coconut and orange zest to coat then place on a cooling rack.
Set aside for 1 hour or until chocolate sauce is set.
