Hacer un sabalge con la harina, la sal y la manteca fría. Agregar el azúcar, ñas ye,as. Unir la masa, dar frío y estirar la preparación sobre el papel siliconado. Cortar discos de 12 cm de diametro. Colocarlos dentro de aros y cocinar a 180ºC.
Crema de anís y vainilla:
Hacer una crema inglesa con la crema, leche, azúcar, yemas, vainilla y anís. Fundir el chocolate a baño maría, unir la preparación. Agregar la gelatina. Batir la crema a medio punto e incorporar.
Peras salteadas:
Caramelizar el azúcar con el jugo, agregar la manteca, la miel y las peras cortadas en cubos. Cocinar hasta que estén tiernas, agregar las almendras y los pistachos.
