"This is certainly a most delicious and very moist banana cake. I coated it with a mild lemon icing. When next I make it however, I will use a 5 by 9 inch pan as 9 by 9 gave no depth to my cake, and hence 45 - 50 minutes cooking fan forced was too long."

1 1/4 c Sugar
2 Eggs
1/4 ts Salt
1/2 c butter; Softened
1 ts Vanilla
1/4 c Sour cream
1 c bananas; (2 large) Ripe
1 1/2 c Flour
1 ts Baking soda

Preparation

One of the moistest banana cakes we`ve ever eaten...I don`t remember where the recipe is from, I`ve been making it for so many years. If you so desire, you may add a few mini chocolate chips to the batter. Preheat oven to 350`. Beat butter, sugar, eggs, & vanilla. Dissolve baking soda in sour cream. Add to mixture & beat well. Add bananas and dry ingredients. Mix just until blended. Bake in a sprayed 9x9 pan at 350`for 45-50 minutes. Have a cup of coffee & enjoy this cake!! First time it got too brown and the inside wasn't fully cooked as I followed the baking time and temp. on the recipe. Second time I tried 60 mins @325 and it turn out perfect! Amazing! My family enjoyed it a lot.

This was delicious! Very moist!!! My kids loved it. I will say I do not see much of a difference between this and banana bread, but no biggie.

Made 3 recipes last week for my son's potluck party, it was a hit, cake was supet moist . I decrease the sugar to 1 cup per recipe if using super ripe bananas. I'm plsnning to bake again this weeknd.

It didn't cook all the way through with time posted. I cooked it a little bit longer on lower temp so it didn't keep browning. I also didnt have sour cream so i dissolved the baking soda in greek vanilla flavored yogurt. Will make it again
