Mojito Slush

Don't let the ingredients turn you off!! This is a great make ahead party drink. It keeps well in the freezer. It is sweeter than a traditional mojito but very good!!


1 pkg. (3 oz) lime gelatine
2 Tbsp. sugar
1 cup boiling water
1 cup fresh mint leaves
2 cans (12 oz each) frozen limeade concentrate; thawed
2 cups cold water
1 cup citrus soda; We like Mt. Dew
1 cup rum
Additional ingredient:
2/3 cup citrus soda for each serving

Original recipe makes 13 Servings



In a small bowl dissolve gelatin and sugar in boiling water. Add mint leaves. Cover and steep for 20 minutes. Press through a sieve; discard mint. Stir in the limeade concentrate, cold water, soda and rum. Pour into a 2-1/2 qt. freezer container. Freeze overnight or until set.

For each serving, scoop 2/3 cup slush into a glass. Pour additional soda into the glass.

This was delicious! Don't be afraid of the jello being in there, it's fine, just used for sugar and coloring. We used Sierra Mist soda, and it was refreshing!

The original recipe called for grapefruit soda (Squirt ??) but we substituted Mt. Dew and really like it. [I posted this recipe.]
