This is easy and makes a good, home cooked meal. Just put some potatoes in the oven to bake with the meatloaf and add a salad and dinner is served!
Preheat oven to 350 and spray a loaf pan with non-stick cooking spray. Put the crackers in a sandwich bag and crush them. Put meat, egg, cracker crumbs, Rotel tomatoes, onion soup mix, celery salt, garlic, parsley, and bell pepper in a medium mixing bowl and mix all ingredients well with clean hands. Turn the meat mixture into the loaf pan and pat down gently to form a loaf. Pour the ketchup on top and spread it evenly over the meat with a spoon. Bake at 350 for at least an hour. We like ours slightly brown on top and that usually takes about 1 hour and 20 minutes.
