Delicious family lasagna. Very easy.
Cook lasagna noodles.
Saute beef and onion in 2 tbls olive oil. Add everything except cheeses and eggs.
Simmer for 25 minutes.
Mix ricotta cheese and eggs with a sprinkle of salt and pepper.
Grease pan.
Place some sauce on bottom of pan.
Then, layer with the noodles and directed on the box. Cover the noodles with the cheese mixture, mozarella cheese, sauce and sprinkle with parmesan cheese. Repeat. Probably three layers.
Bake in 350 degree oven covered with foil for 30 minutes. Remove foil and bake for 10-15 minutes longer or until hot and bubbly.
Tastes best if prepared a day ahead.
