Twist on wesson oil mayonnaise recipe, paleo, "egg-white free", While this has egg yolks, it can be tolerated by most people on an autoimmune diet.
Mix all ingredients. except oil, in kitchenaid type mixer with whisk attachment on high (can also use a food processor). With machine running on high; very, very slowly drizzle oil in. The speed of the drizzle should be just faster than a drip. As mixture begins to emulsify (look like mayonnaise) you can add the oil at a little faster pace. I personally add it very slowly, it takes me about 5 minutes to pour the full pint of oil in.
*Note: You can add oil at a faster rate to a food processor.
Olive oil has too strong of a flavor for my family's taste.
Theoretically once it emulsifies you can essentially speed it up to a slow pour but I've had so many recipes not completely emulsify I just take the time. Pull up a stool!
