This was the one thing my Dad could make really well when I was growing up. They puff up while cooking in the oven to create the "monster" in the pancake. We used to serve it smothered in strawberries.


3/8 cup Margarine; melt in 9x13 pan before adding other ingredients
5 Eggs
1 1/4 cup milk
1 1/4 cup flour

Original recipe makes 1 Servings



Pre-heat oven to 400 degrees.

Melt butter in 9x13 inch pan by placing in hot oven for a few minutes.

Mix eggs, milk, and flour together. Pour over melted butter.

Bake 20 minutes until puffed and golden. Cut into squares. Serve with syrup, mashed strawberries, or other favorite pancake topping.

It would be better if you used less eggs. I made this for my family and all we tasted was the eggs.

My grandma called this Panukaka it's pancake in Swedish. Easy and fantastic. Top with maple syrup or blueberries and sauce. Don't open the oven too much during baking or it will fall.
