A delicious low-fat way to use up all those summertime squash! Farina is the secret ingredient.
Melt butter in sauce pan. Stir in shallots...cook slowly for one minute.
Add zucchini, broth, vinegar, and dill and bring to a boil. Stir in farina. Simmer 20 minutes.
Let cool slightly, then puree in blender with sour cream, salt, and pepper.
Chill and enjoy
