A variety of ingredients you may have on hand can be added to this versatile dish which makes it a great recipe to use when u have a surplus of veggies in the fridge.
In a medium frying pan sautee the chicken in olive oil on high heat, until browned, about 3-5 minutes, season with salt and pepper. Add Spaghetti Sauce to the chicken, stir and cook on medium heat, covered, for about 8-10 minutes. Add the mozzarella cheese to the chicken and Spaghetti sauce (do not stir) , cover and continue cooking, until cheese is melted, about 2-3 minutes. Serve over Pasta or Rice.
*Any additional cooked vegetables you want may be added with the spaghetti sauce to change it up a bit.
