KFP, Vegetable & Potato Kugel for Passover
make as cupcakes for individual servings
1. mix flour, baking powder, tarragon, salt and pepper in small bowl, set aside
2. peel potatoes, place in big bowl of cold water after peeling
3. put garlic, mushrooms, spinach, and tomatoes in pan on stove, cook with med lo heat, stirring occasionally
4. cut up onion into chunks
5. cut potatoes into long chunks to feed into food processor with grating blade, replace in cold water immediately after cutting
6. use food processor to grate potatoes and onion together (alternating between them), until all have been grated together
7. remove veggies in pan from stove top/heat source
8. combine dry ingredients from step 1 with eggs and oil in a very large mixing bowl
9. add the potato and onion gratings to large mixing bowl from step
10. add the veggies from the pan to large mixing bowl in step 9
11. mix all ingredients together with hands, thoroughly
12. grease baking dish (13 x 9, casserole dish, or 2 soufflé dishes)
13. bake at 400 degrees for 1 hour
