Slightly savory, but rather delicate dish. The "sauce" is fairly light, allowing the flavours of the chicken sausage and shallots to take center stage. For those looking for an alternative to a traditional red sauce.
In a medium heated frying pan, sautee shallots in 1Tbsp oil until just about tender, then add mushrooms. Cooked covered until mushrooms are done, keep liquid. Add garlic and peppers and pepper oil. Simmer for a few minutes.
Put pre-cooked pasta into a large pot, and add the contents of the frying pan, set on a low heat burner. Fry up the sausage in a med/high pan with 1Tbsp oil, breaking it up so that it resembles ground meat. When cooked through, add to the pot with the pasta. Stir well and heat through. Can be served for 2 for dinner, and a lunch for the next day.
