Mussels*** In Red Sauce

1 1/2 teaspoon olive oil
1/4 cup onion; finely chopped
1 clove Garlic; chopped
1 28-oz can Tomatoes; crushed undrained
2 tablespoon Flat leaf parsley; chopped
1 1/2 tablespoon Fresh Oregano; chopped
1/2 teaspoon Crushed red pepper
2 pounds Mussels; scrubbed and debearded

Original recipe makes 4



1. Heat oil in larger Dutch oven over medium-high heat. Add onion, saute 3 minutes or until tender. Add garlic; saute 1 minute. Stir in tomatooes; partially cover, reduce heat, and simmer 30 minutes.

2. Add parsley and remaining ingredients; cook 5 minutes or until shells open, stirring occasionally.

3. Remove fm heat; discard any unopened shells.
