"Years ago this recipe appeared on the back of OuakerOats cornmeal box--not anymore. Other recipes are not as good. So simple, you can memorize the ingredients!"

Ingredients

1 c Yellow cornmeal
1 c Flour
1/4 c Sugar
4 ts Baking Powder
1/2 ts Salt
1 c milk
1 Egg
1/4 c Shortening; melted

Original recipe makes 9 Servings

Servings  

Preparation

Combine cornmeal, flour, sugar, baking powder and salt. Add milk, egg and shortening. Beat until fairly smooth, about 1 minute. Bake in greased 8-inch square baking pan in a preheated hot oven (425 degrees) for about 20-25 minutes. NOTES : I use 1/2 cup sugar and bake in a 9-inch square baking pan. Has anyone tried substituting butter for the shortening?

The cornbread will still turn out delicious if you sub in 1/4 cup butter for the shortening. It really won't make that much of a difference. - EditorBigOven 1w ago

If shortening is not available, you can use 1/4 cup butter. 1 cup polenta can be used instead of yellow cornmeal. - EditorBigOven 1w ago

Excellent cornbread. Made as directed except used only 2 tablespoons if sugar. Served with pinto beans cooked with ham. Yum!

This cornbread has the texture of cake! Delicious! When I want a more traditional style, I cut the sugar in half, and substitute buttermilk for milk.
