This makes 4 large bread pans 4x8x3
Recipe by Frank and Helen Weinheimer
First Mix:
5 cups sifted flour together with, 1Tsp. baking soda, 1/2 Tsp. salt and 1 Tsp. cinnamon
Grease and line pans with brown paper and grease the pan and the paper after it is in the pan.
Oven Preheat 250 check after 2 to 3 hours
Second Mix:
1 lb. Butter or Margarine, 1 lb. sifted Brown Sugar, 1/2 cup Sugar, 8 eggs
Add to Second Mix:
8 ounces each of chopped cherries(1part red 1part green)
8 ounces each of chopped citron, orange peel, lemon peel and pineapple all of which are candied, 2 lbs. of raisins, 2 lbs. of mixed fruit, 1lb. slivered almonds, 8 ounces currant jelly, 8 oz. honey.
Now add First mix GRADUALLY to Second mix
Evenly distribute mix into 4 pans. When in oven cover with brown paper and remove paper when nearly done. Paper prevents the top of the cake from burning or being done to soon. When cakes are done let them cool until easily handled and carefully remove paper. Wrap in aluminum foil when completely cool. They can be stored forever.
Tops should look or be getting dry looking. You can remove paper from top when near to done. Let them cool upside down.
