Pan seared, then broiled with lemon-herb butter.
1) Marinate swordfish steak in fridge for 2 hrs in the white Worcestershire sauce. (When this stuff first came out several years ago, it was advertised as great for fish, and it is!)
2) Preheat broiler on Hi.
3) Dump excess marinade off the steak and sprinkle it with the Weber's seasoning. Next sear it in a cast iron griddle pan, 2 mins per side. I move it halfway through each side to get more griddle marks.
4) Put a glob of the lemon-herb finishing butter atop the steak and put it under the broiler (door ajar) for 5 mins. Turn it, another glob of butter, then 5 more mins. (These times worked well for me with a 1" thick steak.)
