Ready in 30 minutes
A family favourite.
Steam potatoes in microwave (or boil on stove) till fork tender. Don't overcook.
Finely grate 1 tbls. lemon peel. Then squeeze lemon 3 tbls juice from lemon. In a large bowl, whisk juice with peel and dijon. Whisk in oil, garlic, salt, thyme and sugar. Set aside.
Thinly slice green onions. Drain potatoes well (if boiled). Cut potatoes in chunks or if using nugget potatoes, just in ?. Add warm potatoes and green onions to bowl. Sprinkle cilantro over and gently toss. Serve warm or at room temperature.
One of our favourite ways to eat potatoes. We like some fresh black pepper cracked over top.
