Steak with wine butter
To make red wine butter:
combine shallots and wine in a small saucepan over high heat. Boil until liquid evaporates completely, about 10 minutes. Place softened butter pieces in a bowl and pour shallots over them. Add the salt and pepper and whisk until no lumps appear. Cover and refrigerate until mixture is the consistency of butter. Or place bowl in an ice bath and stir until the correct consistency.
Grill steaks, transfer to warm plates and spoon 1 to 2 tablespoons of butter on top of each steak.
