Preheat the oven to 350
Spread the brazil nuts (or almonds) on a baking sheet and roast for 10-15 minutes until they are lightly golden
Let the nuts cool
Melt butter
In food processor, pulse until nuts are finely chopped
Add remaining ingredients and pulse to combine
Line the bottom of a 9" springform pan with parchment paper and coat the inside of the pan with soft butter
Pat nut mixture evenly into the bottom of the pan and then place in the fridge
Making the Cheese Cake
Increase oven heat to 500
Beat the cream cheese until smooth
Add sweetners, sour cream, lemon juice and vanilla and beat until combined
Add the egg yolks and eggs 2 at a time beating until incorporated before adding the next 2 - scrape the bowl frequently while mixing
Carefully pour the filling over the chilled crust and place the springform on a rimmed baking sheet or large pan
Bake for 10 minutes then reduce the temperature to 200 and continue baking for 90 minutes - DO NOT OPEN THE OVEN DOOR!
The cheesecake should still look soft in the center
Transfer to a cooling rack
After 5 minutes, run a paring knife around the outside of the cheesecake to loosen it from the pan
Continue cooling to room temperature and then server or chill
