No-Egg Egg Salad

2 tb Finely chopped green onion
1 ts Turmeric
2 ts Vinegar
1 ts Mustard
1/4 c Finely chopped carrot
1/2 ts Black pepper
1 tb Soy mayonnaise (opt)
1/4 c Finely chopped celery (opt)
1/2 ts Salt
1 ts Hot sauce
2 tb Finely chopped green or red
1 pk Firm tofu, drained and

Original recipe makes 4 Sandwiches



In a large bowl, mix ingredients together, and youre done. Makes 4 sandwiches or serves 6-8 as a dip.
