No one makes a bolognese sauce better than the Italians and no one makes one better than my Nonna.
1. Heat a saucepan on medium heat over the stove and add the oil, onion, rosemary, garlic and basil until the onion goes transparent.
2. Add the mince meat, red wine, vinegar, salt and pepper and cook over medium heat until the meat has browned through and the liquids have dried.
3. Add the diced tomatoes, tomato puree and pinch of sugar, stir to dissolve the sugar. Simmer on low heat until the sauce thickens.
Serve with your favourite pasta and garlic bread on the side with a nice glass of vino (wine)
Make sure the liquids have dried up in step 2 before adding the ingredients in step 3 otherwise the sauce will become very watery.
The best type of mince to use is the Heart Smart mince (in Australia) or low fat so that there is less oil in the sauce.
